With the first day of autumn just around the corner, some are preparing by unpacking their fall and winter wardrobes. We, on the other hand, are preparing by shifting our sights from light and seasonal summer fare to warming, comforting fall fare.

It’s hard to pinpoint what exactly it is that makes cuisine this time of year so special. Perhaps it’s the reintroduction of old favorites after a year-long break, or the knowledge that these dishes are literally an indispensable aid in fending off the bone-chilling cold. There’s also a certain charm about the ease with which one can imagine autumnal meals—braised meats, squash stews, apple pies, and ales—having a rightful place on our own dining room tables or in the halls of medieval kings of yore. These meals are timeless, tested, and true.
